- 1/2 diced yellow onion
- 3 stalks chopped celery
- 1 diced medium red bell pepper
- 1-4 cloves minced garlic
- 1 can 14 ounces or 30 ounces diced tomatoes
- Cauliflower chopped (amount to preference)
- Green beans trimmed and chopped (amount to preference)
- Low-sodium vegetable broth amount to preference
- Olive oil for sautéing
- Seasonings salt, pepper, and herbs to taste
Heat a splash of olive oil in a large pot over medium heat. Add the diced onion, chopped celery, diced red bell pepper, and minced garlic. Sauté for 5-7 minutes, or until the vegetables have softened and the onions are translucent.
Once the aromatics are aromatic and tender, add the chopped cauliflower, green beans, diced tomatoes (with their juices), and enough low-sodium vegetable broth to cover the vegetables. Season with salt, pepper, and your choice of herbs.
