Meatball Recipe Keto

Keto meatballs can be a fantastic addition to your meal rotation, offering both flavor and versatility without the carbs. To guarantee success, pay attention to texture by not overmixing the meat. Use eggs and cheese as binders, and consider adding moisture with zucchini. Freezing homemade meatballs ensures you have quick meals ready for busy days, allowing for convenience while sticking to your keto diet. Freeze cooked meatballs for quick meals later. You can customize your meatballs with various meats like ground beef or turkey, and enhance flavors with spices like Italian seasoning and garlic. Bake or pan-fry for a crispy exterior. Remember to monitor the carb content by choosing low-carb alternatives like almond flour instead of breadcrumbs.

Ingredients

  • - 1 pound 80/20 ground beef
  • - 1/2 pound ground pork
  • - 1 large egg
  • - 1 small onion finely chopped
  • - 1/2 cup freshly grated parmesan cheese
  • - Salt and pepper to taste
  • - Olive oil for cooking
  • - Optional spices such as parsley or oregano
  • - Optional additives like shredded zucchini or almond flour

Instructions

  • In a large mixing bowl, combine the ground beef, ground pork, egg, chopped onion, and grated parmesan cheese. Season with salt and pepper, and add any optional spices or additives you'd like. Mix well using your hands or a spoon until everything is evenly incorporated.
  • Once the mixture is fully combined, use your hands or a small cookie scoop to form meatballs into your desired size. Aim for about 1 to 2 inches in diameter for even cooking.
  • Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, carefully place the meatballs in the skillet, making sure not to overcrowd them. Cook for about 6-8 minutes, turning occasionally, until they're browned on all sides and cooked through.
  • Alternatively, if you prefer a healthier option, preheat your oven to 400°F (200°C). Place the formed meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until they're fully cooked and browned.
  • Serve the meatballs hot with marinara sauce over low-carb pasta or vegetables, and enjoy!
